This past month was very busy,  recently we celebrated my dad and brothers birthday. For the weekend get-together I decided to make something that is a healthy desert. My dad loves cheesecake, and well me on the other hand, I cannot eat dairy (due to my dairy allergy). So, I opted for this super easy, delicious Matcha cheesecake. They turned out great! The Matcha cheesecake was a hit for how delicious, and was very protein rich and filling too. This was a win-win in my opinion.I thought this would be a perfect recipe to share with others, because it is easy and healthy to make for any occasion. 1 cup packed (200 g) pitted dates*

1 cup (120 g) raw walnuts


1 1/2 cups (180 g) raw cashews, quick-soaked*

1 large lemon, juiced (scant 1/4 cup or 50 ml)

1/3 cup (80 g) coconut oil, melted

1/2 cup + 2 Tbsp (150 ml) full-fat coconut milk (I use only the fat from the can)

1/2 cup (120 ml) agave nectar or maple syrup

2 Tbsp (32 g) Matcha Culinary Powder
